Ruma's Recipe of the Week - Peachy Keen Picks



It's Memorial Day weekend, time to get outside, fire up the grill and enjoy fresh tastes of the season! We've even included a refreshing beverage - best served in the shade with grass between your toes, of course.


Grilled Balsamic Peaches
(A great side-dish for grilled pork or beef)

You need:
  • 4 peaches, halved and pitted
  • 1 tablespoon olive oil
  • Salt and ground black pepper to taste
  • 1/4 teaspoon Cajun seasoning
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped Italian flat leaf parsley
  • 4 sprigs Italian flat leaf parsley, for garnish

Directions:

  1. Preheat grill on high heat for 10 minutes
  2. Place olive oil in a bowl
  3. Add peach halves to bowl and toss to evenly coat with olive oil and season with salt and pepper
  4. Cook the peaches, flesh side down, on preheated grill until slightly charred, about 4 to 5 minutes
  5. Remove peaches from grill and dust with Cajun seasoning
  6. Cut halves into 1-inch thick slices
  7. Place halves in bowl; add vinegar and parsley, tossing peaches to coat evenly
  8. Place on serving platter and garnish with sprigs of parsley
  9. A great side-dish for grilled pork

Makes 4 servings

White Peach-Silver Tequila

You need:

  • 2 ripe white peaches
  • 1/4 cup silver tequila
  • 1/4 cup peach liqueur
  • 1/4 cup lime juice
  • 2 tablespoons simple syrup
  • Ice cubes
  • Slice peaches, for garnish
  • Mint sprigs, for garnish

Directions:

  1. Place the peaches in a food processor and process until smooth
  2. Pass through a mesh strainer into a bowl
  3. Combine the peach puree, tequila, liqueur, lime juice and simple syrup in blender until smooth
  4. Serve over ice in rocks glasses and garnish with slice of peach and mint sprigs

Ruma's Recipe of the Week - Thai Papaya Salad







Thai Papaya Salad

You need:

  • 1 Roma tomato, chopped
  • 1 1/2 cups fresh green beans cut into 1/2 inch pieces
  • 1 cucumber, cute inot 1/2 inch cubes
  • 1 1/2 cups cubed papaya
  • 2 cloves garlic, minced
  • 1 Thai or Serrano chile, finely minced
  • 1 lemon, juiced
  • 2 limes, juiced
  • 2 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1/2 cup peanuts, chopped
  • 1/4 cup cilantro, chopped

Directions:

  1. Combine tomato, beans, cucumber and papaya in large bowl
  2. Toss with garlic and chili pepper
  3. In a small bowl, stir together lemon juice, lime juice, fish sauce and sugar
  4. Pour juice mixture over papaya mixture and toss
  5. Sprinkle with peanuts and cilantro and serve

Summer is coming - time to get cookin'

Long lazy days, warm nights, trips to the beach - there are so many things to love about summer. But it should come as no surprise that here at Ruma's perhaps our favorite thing about summer is the FOOD!

There are so many fresh flavors to be enjoyed on the grill, in salads and desserts or whipped up in refreshing beverages - we thought what better time than on the cusp of the unofficial start of summer (Memorial Day weekend is just around the corner!) to introduce Ruma's Recipe of the Week.

Every Wednesday we'll bring you a great new seasonal recipe to try. Let us know what you think!

Grilled Halibut and Tropical Mango Salsa
You need:
  • 2 cups plum tomatoes, seeded and diced
  • 1/2 cups diced, peeled ripe mango
  • 1/2 cup diced onion
  • 2 tablespoons fresh lime juice
  • 1 tablespoon cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced
  • 4 (6 oz.) halibut fillets
  • 1 tablespoon olive oil

Instructions:

  1. Combine first 7 ingredients
  2. Stir in 1/2 teaspoon salt, 1/2 teaspoon pepper, and garlic
  3. Rub halibut with oil
  4. Sprinkle halibut with remaining salt and pepper
  5. Place halibut on grill rack, grill for 3 minutes on each side or until fish flakes easily when tested with a fork
  6. Plate with mango salsa

Makes 4 servings
The skinny: 295 calories; 7.8g fat; 19.5g carbohydrate; 37g protein; 2.8g fiber
